PULSE is Ayshé and Mark — inseparable since 1999, plantbased since 2013. Their backgrounds in theatre and education shaped a kitchen with a philosophy: food is culture, and good taste comes above all.
They founded PULSE in London at the end of 2014, serving their first paying customers at Hampstead Community Centre. In 2021 they moved to Edinburgh and found PULSE a permanent home under the stone arches of St John's Church — a candle-lit vault of green walls and fairy lights, with a garden terrace looking up at the Castle.
Minimal oil, hardly any sugar, as little waste as the day allows — and none of it at the expense of flavour. As one reviewer put it: "5/5, but only because we couldn't give 6 stars."
